ike his father, Herbert Schovajsa was born in Bleiblerville and has lived here all his life. He and wife Jo Ann met at a dance in Fayetteville, and have been married 47 years.
Herbert opened his original meat market on May 1st in 1969. The catering business began in 1972 when friends asked the Schovajsas to cook for their wedding.
For years the Schovajsas did both catering and processing until, finally, the business grew so big that they couldn’t do both. They gave up the meat market to focus on their catering business. When Jerrel graduated from Texas A&M in 1990, he joined the family business. His wife, Malinda, also helps whenever she can find time from her job at the Brenham Clinic.
Today, the only meat processed by the Schovajsas – due to popular demand – is Herbert’s famous sausage that is actually made by Jerrel. Herbert, the barbecue expert, slow cooks their meats over coals on an open pit. Jo Ann lends her magic touch to their delicious side dishes and all the trimmings.
The original kitchen has grown to about 5,000 square feet. A new building is currently under construction, with more room for retail products.
Look for the grand opening in 2008 at the new location on FM 2502 in Bleiblerville. There you will find the same great food and the same passion for cleanliness that Herbert’s Catering is known for.
